Pickles...refrigerate or not?

December 2, 2015 3:41am CST
My wife likes her pickles at room temperature. So, we started having a conversation over dinner last night about whether pickles need to be kept in the refrigerator. However, as per my views, the pickles rotten and moulds are formed when they are not used for long and if stored in room temperature. So, I just wanna know if moulds get formed in the pickles, if stored in the refrigerator. How to store pickles, Room temperature or Refrigerator ? Thanks in advance!

The whole point of pickling things is to preserve them so they do not need to be refrigerated. You pickle to preserve, then you want to keep the preserved item in the fridge?? Your wife is right, there is no point keeping a pickle in the fridge as it is a pickle. I do not have a fridge, I pickle and preserve everything and have never had an issue.

If pickles are not used for long, fungus is formed over it. So, how to avoid the moulds to be formed?

@wasif123ster If they are well pickled, ie, in a good acid and salt solution then sealed - the fungus won't set in. Once you open the jar, eat them!

Normally if one has been careful in mixing the right ingredients at the right temperature there is no need to refrigerate pickles. I make mango,Lime and Amla pickles at home in small quantities and don't refrigerate it. I make enough to last for 2 or 3 months. But if you are making pickles in large quantities and plan to keep it for a year or so, I feel it is better to refrigerate it and take out small quantities for daily use.

this is what I have started doing. I am refrigerating the pickles, and when in use, I remove it from the refrigerator, as I am not a frequent user of pickles.

In my opinion, the pickles will be better to store in the refrigerator so that it will taste well. And it can keep in the refrigerator in a longer time than keeping it at the room temperature.
