Time To Make The Donuts......Ummm No Cookies!!

My household is only my husband, myself, and my oldest son Sam who is 24. I have decided not to put up a Christmas tree this year as I just don't have the heart or energy to do it. Thankfully the rest of the household is cool with that.
What I won't forgo is the Christmas cookies. So today feeling very much motivated
( a rare occasion for me ) I went to the store and got everything I need for the 6 different kinds of cookies I want to make this year. I then cleaned up all the containers I use and put out the butter to soften for 4 of the six I am going to make.
2 of the cookies need to be mixed then chilled before they can be worked and readied for baking. I am making my Grandmother's famous Sugar Cookies, and one of my favorite Peanut Butter Cookies. I also am making and baking tonight Pecan Balls, not one of my fav but my dad has been gone for many years and there were his fav so when I eat one I think of him. And one of my husbands favorite cookies, Oatmeal, raisin, walnut, chocolate chip. I can't tell you how many spoons I have broken mixing those up so now I just use my hands.
The other 2 cookies I am making tomorrow are Chocolate Chips and Butterscotch Chip. Not really Christmas cookies but we like them. I am also considering but haven't made my mind up yet, making rosettes. They are awesomely delicious but just a ton of work frying them on the stove.
So after dinner tonight I will whip up those 4 cookie batters, put 2 of them in the fridge to chill overnight and bake the other 2.
Sounds like a plan.

I am only good for chocolate chip - a few years ago I tried 2 or 3 sugar cookie recipes and they all came out bad.

I have been making the sugar cookies for many many years this year however I am just making them round as opposed to Christmas shapes.

@fishtiger58 One year i felt really lazy and just cut them into squares and my daughter decorated them like presents. They were really cute.

Many many years ago I had the easiest sugar cookies recipe and the cookies were delicious. Needless to say I lost the recipe and have never been able to find one quite as simple and easy as that one was. I do love sugar cookies though

@fishtiger58 I hear you. I really didn't want to this year but my son overrode me on that one. So it is up now. I did so much with trees over the years. At one point I had a 9 foot tree with over 3000 lights on it. And I had it where I was able to make it a different color each night. I no longer have that tree. I now have an 8 foot fiber optic one. But it is not as easy as I thought it would be. So I am looking for real simple or digital next year.

@inertia4 now that's an interesting idea, my kids are grown so they don't care and I'm thankful for that I just don't feel like doing it.

I think you need a teeny, tiny little Christmas tree just because. I have cut back a lot on decorations and I am getting ready to start the cookies. It is just that time of year. I put little ones all over the house, Christmas trees that is not cookies lol

Baking Christmas cookies is one tradition I hold dear. I have a few favorites that have sentimental memories for me and it's almost like those few people missing at the Christmas celebrations are still with us in spirit

For a variation on a drop sugar cookie, add finely chopped maraschino cherries along with their juice. Yum. Enjoy your cookies.
