Do you eat spaghetti squash?

That is what we had tonight. I had spaghetti squash and I added fresh tomatoes and garlic, plus a good German sausage. Covered it all with four cheese alfredo sauce, from a jar. I sprinkled parmesan cheese on it to cook.
The sausage was actually pre cooked, and the squash was cooked so I could shred it from the shell. I combined the sausage, squash, fresh tomatoes, fresh garlic and four cheese Alfredo sauce. Parmesan on top and into the oven at 350 F for thirty minutes.to combine and warm it up. I put shredded cheddar on it when it came out. It was very tasty. Hubby put all the rest in containers for his lunches next week. We do not eat pasta here, except homemade lasagna, so this is what I use instead, squash, or other shredded veggies.

It is good. When I worked in the preschool the kids loved the spaghetti squash with red sauce we would do for food experience.

@ScribbledAdNauseum I would love to do that. Spread a huge picnic out back and have people come and go.

Squash seems to be very versatile. I think it is easy to grow here.

@fishtiger58 squash, melons, cucumbers and gourds are all related. They are subject to a beetle infestation. The soil has to be warm before the seeds are planted or they rot. They should not be planted next to each other because of cross pollination. That also includes pumpkins.

@GardenGerty My husband is an amazing gardener. However for some reason he has problems with melon type veggies and fruits. Is a squash in the melon family.

Although squash is not expensive, many people do not like it, so I have seldom seen it served in group situations. It is too bad.

I love spaghetti squash as a substitute for actual spaghetti noodles. You can hardly taste the difference, and they are so much more healthier. What you made sounds like it was delicious. I am not a fan of alfredo sauce, I'm afraid. I'd have to substitute it for tomato sauce.

There are so many choices with squash. I think I will plant some this year.

@GardenGerty Yes there are, we prefer butternut. Be careful planting it, the vines really like lots of space. We used to grow them, but the farmers in the area that grow them sell them for pocket change, and its easier for us to buy them then to plant them ourselves-we're getting lazy in our old age!

I have had it just with butter and salt and pepper and with other spaghetti type sauces. I think I will plant a variety of squash this year.

@paigea I am not sure about spaghetti squash, but I believe they are winter or hard shell squash. That means you just keep them in a cool dry place.

@GardenGerty I have eaten it with just butter salt and pepper too. We use it with spaghetti sauce too. But your version sounded great! I don't know how one would store spaghetti squash or other squashes, so if I plant it I will only plant a couple I think.

Sounds like a dish that mushrooms would be good in. I don't eat squash it makes me gag. I do like acorn and try to eat it occasionally.

I would have loved to have mushrooms for it, but did not have any. This does not have that soft texture that may bother you. Lots of people have problems with texture.

We have some and it is not bad. I like using it in the place of spaghetti. Your dish sounds so very good.

That is what I have to do, use it where I would have used spaghetti, cause hubby does not eat spaghetti.

@GardenGerty Does he not like all noodles/pasta's/spaghetti? Here hubby likes the Angel Hair Pasta for our spaghetti and I just like the regular spaghetti noodles.

@GardenGerty If I want something to eat even if he doesn't like it I still fix it - he makes stuff I can't eat - it works out.

I have been pondering getting one of those spiral thingies to make "noodles" from things, but I do like me a good baked spaghetti squash

I have thought about the veggetti thing, but I have an antique tool that will do about the same. It is a zyliss, I think. You can still get them, in cooking stores, but they are plastic. Mine is metal. I have bought broccoli shredded like that and zucchini as well, but it is even better when you do it fresh yourself.

I had not thought of the sausage before but we had quite a bit we got at a local butcher shop and I wanted to serve it in a variety of ways.

We don't get this here on the islands and some squashes are harder to grow here than others. In the past I have eaten this and done almost like you when cooking it. I think it is delicious and I do like to eat it when I can find it here. That is not all too often because a lot of people have no idea what it is or even how to cook it here.

I imagine there are plants there I would not know how to cook as well. I wonder why squashes do not do well there. They like warm weather.

@GardenGerty A lot of problem here is timing and when we can plant them or not. I see that they don't like a ton of rain and normally when we plant them it needs to be done between the end of March to the middle of April for them to do well. Same with zucchini here on the island. We can get the flowers but not always set the food on the plants.

I have seen lots of spaghetti squash or spaghetti zucchini all over Pinterest, but I have not tasted one of these. I eat squash, usually we cooked it sautéed with coconut milk and shrimp with a little dash of chili, and over rice. Not exactly low-calories but it tastes good. I am not sure if we will like spaghetti squash, but since we are aiming to eat healthier we might try this one out one of these days.

You would have had to have made it or someone else served it to you. You really do not find it in restaurants or ready prepared in stores. Unsauced it slightly resembles sauerkraut, but it does not have the vinegar/salt flavor.

My daughter and her family visited from Michigan and my local kid and family love pictures so that was part of our Christmas this year. A squash is not something to kill over, but hubbys can be funny.
