Foolproof Buffet Recipes that Don't Break the Bank?

In a few weeks we will be celebrating my mum's 80th birthday and so having a get together with some family. Originally my sister mentioned whether to order buffet type food from Costco Deli Service, but my husband and I are not too keen on this as our daughter has an egg allergy and so becomes more difficult for her when egg based food is jumbled together on a platter. Plus I know that my aunts who will be there are not too keen on the food coming from Costco. My brother in law did send me a copy of the Costco deli service leaflet and in my opinion it looks quite expensive, The sandwich and wrap fillings don't even look that special to me and if we're paying good money I'd prefer something better. True, it would be easy as there would be nothing to make, but I definitely don't feel it's ideal. So, right now my husband and I are wondering as to whether to just make some food and perhaps buy in some pizzas, mini sausages, etc. I know that puff pastry could serve a multitude of uses - We could make a tomato and herb type twist with them, or we could make pastry squares with a savoury topping. In the past I have also made sushi rolls (the ones wrapped in seaweed), so we could make them. I was also thinking we could make a dish of nachos as that's always easy enough when you buy a bag of tortilla chips. And of course, we can make sandwiches or wraps. Do you have any tasty suggestions for fillings? Do you have any possible ideas for some buffet finger food which is tasty, easy to make and wont cost a fortune? We only need to cater for between 12 to 16 people, so not a huge amount. Thanks.

Yes I have a perfect snack dish. You can buy a block of Velveeta cheese. Melt it, and add a can of Ro*tell diced tomatoes and green chilis I looked on a UK site and hopefully you can get those in the shops. Yes so it makes the perfect dip for Nacho chips. Everyone here is crazy about it. It is lovely taste too. And for sannies, I would make the usual, salmon, egg, cucumber. For sweet I would just make a big trifle lolz How about a big crock of chili? That usually goes a long way. Easy to make.

@Darroch Yes Darroch and you can make it to your liking that way you can make it as thick or thin as you like to spread it out you know? I found Velveeta for you on the amazon.uk site, but you know i was just checking to see if you could get it uk side. Anyway, I know all will turn out well. Let us know what you decide to do and take photos of your spread for us haha please if you want to. I love to look at buffet photos lolz There is a site called Yummly with loads of good ideas too.

Is there anything your mum really loves that you could make? Or, have you researched popular finger foods of the 1930s?! You could turn it into a vintage inspired buffet.

I do not know if you like minced meat balls. That can be used in soup or you can fried it. It is easy to make minced meat ball. You can add in some carrots and spring onion that are chopped to fine pieces.

When I do a buffet I usually have a side of salmon and a large ham as the staples, then new potatoes, salad, crisps, sausage rolls and pickles etc. Chuck in some French bread and quite honestly you don't need a lot else. Just gateau or trifle etc. to finish off with.

I'm sure salmon would go down well, so thanks for that suggestion. And I guess we should get sausage rolls and some French bread. Our local Co-op bakery does some lovely bread too. Cake-wise, we are sorted. My sister is going to make a number 8 cake (using her recipe with eggs) and I am going to make a number 0 cake (using an egg-free recipe so my daughter will be able to have a slice of her Gran's birthday cake).

How about Mac and cheese with chopped ham in it and a bread crumb topping? Or a spinage and artichoke cream cheese dip with pretzel crisps?
