On being Gluten Free...

My journey into being Gluten Free was not an easy one. I am going to start with this discussion because I would love to give Gluten Free recipes once a week that are easy to make and are affordable. And anyone who has to eat this way, knows our bill is a bit more than the average bear.
I was misdiagnosed from 2008 to 2012 with Celiac and between that time, I was in and out of hospitals left and right. So that was one thing, then learning how to eat. That was a nightmare. Everything you seem to touch in the store, especially back in 2012 was full of Gluten. Now, it was not as bad as it used to be. So I am grateful for that. Thankfully I had choices, and of course there are many choices now. Since being Gluten Free has become a choice for some.
For the rest of us that it is not a choice, we don't find it, or I don't find it quite as fun. Man I miss pastries, don't get me wrong. I just don't eat them anymore. Not really. It is very rare I get any sweet stuff. Part of the problem is, there is always an after taste.
Thankfully my Gram was a baker, so she gave me tools. Now I make a lot of things from scratch. This is what I want to teach others how to do. I will write up a recipe on another post for those who want to warm up for the winter. It is a Chicken Stew and boy did it come out yummy.
Anyway, please feel free to comment, I will write back as soon as I can and I hope I can inspire you, even if you are not Gluten Free Eating, that you can try something new for a side dish or for a party for those who can't eat Gluten.

I understand the eating situation. I am diabetic and learning how to eat right was not an easy thing for me. I cannot have any carbs, so that eliminates all cakes and cookies, breads and pasta. I am not on any medication for it, just diet. It is not easy. There are many options today for these conditions.

Good for you on you not needed meds for your diabetes, that is a tough one too. It can be a pain, however it has forced me to eat better in many ways, I still miss some of the sweets though.
I usually make as much as I can rather than buy, sometimes though there is only so much you can do. Thanks for the input.

@inertia4 When I had my bakery I learned how to make Diabetic treats. It was hard in the beginning, however once I learned how to make them and the trick to it, I became very good at it. Glad you have a place you can go that makes good treats.

welcome to mylot! i've celiac disease myself, misdiagnosed 'n treated with cipro with each hiccup. now i've fluoroquinolone toxicity 'n severe crohn's to go 'long with it. 'tis a challenge findin' schtuff that i can safely eat without triggin' a crohn's flare. makin' yer own's the only safe way to go 's many don't understand the ramifications'f bein' 'glutened'. fer myself, 'tis at least 3 days'f livin' in the loo 'n losin' 15-30lbs. to say it aint pleasant's an understatement.
i reckon if'n yer recipes're original 'n 're minus rice flours, corn 'n soy i'd be interested'n some'f yer fare.

Yes, they are original, I work with many flours, however I found out I can't post them here, so when I have my site up and working, I will see if I can post the site addy on my page. Please feel free to add me. I have a little more freedom with my diet, however I know that it is not easy either way. Thank you for your comment.
