Pomologist: What is That?

Have you ever wondered why fruits, such as apples and pears discolor so quickly after they are peeled?
Well, a Pomologist is the person to ask. They study fruit. They have determined that the discoloration is caused by oxidation, because of an enzyme named polyphenol oxidase, which naturally occurs in all sugar-producing fruits.
You see, the peel does not allow oxygen to penetrate into the sturdy apple or pear peel, so no oxidation takes place.
A banana now, is another story. The banana peel is more porous, and so allows the oxygen to penetrate even though the peel is still in place.
I think that is interesting! And it's a NEW word added to MY vocabulary.

People get paid for studying lots of things, but I suppose they would have to be connected somehow to a scientific study through a laboratory or a college.
