Dinner in the Oven

Sunday was Easter, but I wasn't able to make my leg of lamb due to not being here and my son working. Today is his day off so it is now in the oven.
I got a lot of sleep last night. Went to bed at 2 and got up at 11:30. So I'm here a bit late today. However, before getting on the computer, I got the lamb taken care of.
I seasoned it with rosemary, mint flakes, cloves, and cut up two fresh cloves of garlic, using all the sections of them. Then I quartered three onions, added a little bit of water in the bottom of the roasting pan and put in the oven at 300* for 4.5 hours. Half hour per pound and it's 9 pounds. I got it in the oven by 12:30 so we'll be eating about 5. I still have the potatoes to make - mashed potatoes, which I'll be getting taken care of soon as the lamb has two hours left to cook.
The house smells totally awesome.
No picture yet, but I'll try and get one when it comes out of the oven.

It was delicious, and plenty left. I'm going to freeze the rest, unless I eat more of it, which I probably will before I go to bed.

Had my dinner. Baked salmon fish with baked potatoes. Going to sleep in few minutes. Its 10.30pm. Good night.

I don't like ham and I realized a while ago that Jesus would never eat it on Passover or anytime, but always had lamb, so I started having it. I don't even know how many years I've been eating it for Easter anymore.

@just4him Your Easter lamb made me remember one of my favorite aunts who always made a leg of lamb on Easter

@Marilynda1225 For me it's the only thing to make for Easter dinner. I don't like ham, but I eat it when I'm at someone else's home, as I was on Sunday.

Now that sounds absolutely delicious! I don't know about supper yet. So far today I've had some frozen yogurt (my friend took me out), some fruit, a cup of coffee and a little bit of peanut butter when my stomach began screaming at me. Once my friend leaves from taking the bed apart, I will see if there's something I can cook or heat up.

Chicken is good. I used to eat it before I found out I was allergic to it.
