Slow Cooker Mexican Soup in Instant Pot

I had some ground beef and wanted some soup for the day. I was tell someone else I was thinking of just adding vegetables, but when I started making it, it turned into a Mexican Soup, my hubby was in kitchen when I was dumping things in and he gave some suggestions, thus Mexican Soup created!
I cooked a turkey for Easter so I use that broth, my pot has a sauté mode so I added ground beef, chopped onion and celery. Cooked until browned meat, added broth, tomatoes & green chilies, frozen corn, can ranch style beans, salt, pepper, garlic powder, cumin and chili powder. Moved mode to slow cooker for two hours and it was waiting for us to eat! Made a pan of cornbread! We loved it.

I often make a nice black bean soup that a client requests quite often. She prefers it to be quite spicy. I have to put in a lot of jalapeno peppers, red chili flakes, and 3 times the amount of onion that the original recipe calls for. I cook it on the stove top.

We like spicy too, hubby said to add pepper flakes and I forgot! Yum, Black Bean Soup sound good!

I have my mama's recipe for cornbread, we like ours sweet! Make you some, it is quick and easy or you can buy mix at store. We love making Cornbread Salad with leftovers!

Sounds really good. I have never seen an Instant Pot, I want a new slow cooker I will have to look into this one. I take it they are still available.

Soups is very forgiving, you can add and delete ingredients to your liking! I bet your kids would love it!

Sounds good and good to see you back again. I'm not familiar with 'can ranch style beans' care to elaborate, or maybe take a picture of the can before throwing it away next time. You could add it to a comment here too if you want. I've no clue what that is and never heard of it before, unless it goes by a different name around here.

Hi, you can really add any type of bean, this is a pinto bean in a delicious spiced sauce. In place just use plain pinto beans or black beans and kick up chili power, garlic and cumin a little.

Oh darn, now I'm craving Mexican soup too! I think I'll get hubby to pick me up some ingredients when he's out and about today. It's time to restock, anyway. I think I already have some cooked beans in the freezer (we don't use canned very often.) And I do still have corn, and maybe a can or two of tomatoes. But I'll need meat and broth, unless I decide to make a pot of broth from our frozen soup bags today.And I think I'd want a few crunchy veggies (usually I get bell peppers) to make the soup a little more fresh tasting.
I love that your crockpot has a saute mode! I'll have to look for that next time I buy one. It looks pretty big, too. What's its capacity?

It is not a crock pot, it is an electric pressure cooker, it takes the place of so many other table top appliances, such as rice cooker, slow cooker, stove top pressure cooker and so on. It holds 6 quarts. They have a Model that makes yogurt too that everyone raves about. Mine does not do that!
