Delicious Carrot Muffins

Yes, I just made another batch of delicious carrot muffins. This time I added a bit more raisins and chocolate chips.
I must say that they turned out pretty good.
Do you make your own muffins? I do not like muffins from the Donuts Shops, find them way too big and fattening. Mine are small.
I have been doing the same recipe for decades now which I found in a Chatelaine magazine. I did modify it a bit to suit our tastes here.

I love carrot muffins! I'm not one to put chocolate in carrot cake or muffins, just walnuts and raisins. But if I want my muffins sweeter I'll mix up a dollop of cream cheese with some crushed pineapple and maybe some pumpkin seeds, and I'll put a bit of this mixture in the middle of the muffin. They're very tasty!

I do not buy muffins but prefer to make my own. Besides being smaller, they have more flavor and can have lots of healthy goodness. Yours look beautiful and I bet they are delicious.

Mm, they look delicious. I make apple, bran, molasses muffins. I always add dates. They are so yummy.

Your post reminded me that I need to get busy. Last time I made carrot muffins I put the batter in a rectangular pan and sliced the big muffin into little bars when it was baked. Excellent for snacks for the days we walk the pups before we head home to eat supper. I put in almond meal and less sugar when I make them so that we get a good amount of protein. Whole wheat flour instead of white, too.

Those look really divine Marlina. I know they are better because they are home made and I would find it hard not to eat two of them at least.

I like mine big, BUT when you make them at home you can cut sugars and such and use applesause and whole grains and such to make them more filling and healhier

One of those would go so well with my coffee this morning. I have never tried making muffins, but maybe I should. That would surprise my wife.
