Leftover Grilled Food For Dinner

We cooked out yesterday evening after an afternoon fishing at the pond. It was nice out and when it gets warm out it gets hotter inside as well . To help prevent this from happening grilling food is helpful. When you grill your food it is healthier and it helps save on the electric bill. We had Burgers,Chicken and Potatoes. Today we had the leftovers I didn't want to cook or waste any food. I took the whole potatoes and peeled and diced them. Then I deboned, skinned and diced the leftover chicken. Coated a pan with oil and seasoned all of it. When the pan was hot I threw it all in with veggies and spices and let it heat all the way through. When it was heated through I put some cheese on it and let it cook a bit more until the cheese was melted. Good stuff and easy to make and clean up as well. So how many of you are cooking out and making new meals from leftovers?

I love leftovers when I have them. They are so quick and easy and sometimes taste even better than the first night! :)

@Bunny28 So true! For that reason, when I find a recipe that I especially like, I try to double it so that I will have some leftovers. :)

yes the flavors seem to become more prominent the food has a chance to marinate.

So many people throw away leftover food. I try to make just what we are going to eat jut to avoid waste.

Sometimes it is a bit harder to work with left overs because of how odd the foods may be which sometimes it will make making something new from it hard.

It's not warm enough in England to cook out, but your meal sounds like a great way to use up leftovers.

thanks it was good. I want to visit England some day but when I think of it all I can picture is some dreary place with lots and lots of rain which in excessive amounts makes me feel bummed.

@Bunny28 I'm not trying to promote my own post, but I wrote an article a few days ago about England being a green and pleasant land. It debunks a few myths about our weather - for instance did you know that London gets less rainfall than New York.? It does rain on average about 140 days a year, but a lot of it is gentle rain and it's spread out over the year. So please don't let our weather put you off - we're well worth a visit. Here's a picture of my garden, which wouldn't look like that if it weren't for our climate.

@jaboUK I didn't know that which is now something I can tell someone if it comes up in conversation. I have to admit that 140 days seems like a lot almost half of the year but I am sure that visiting and enjoying the festivities that I won't even really notice it. My phone won't let me sign into the site and the computer I am using which is a friend of mines doesn't show the pictures. I am unable to see your garden.

I always do that. Fried.fish can be good.for a vegetable soup ;)

fish is tough because unless it is used as you mentioned in a soup it pretty much becomes rubbery which texturally speaking is unappealing.

@Lucky15 I guess you are right if it is a thicker piece of fish instead of a thin fillet I suppose it makes a huge difference as well.
