I read your discussion about two ingredient muffins, @Margielyn .
They are delicious.
When hubby went to the store I had him get me a Chocolate Cake Mix.
I did change it up a bit. I put some pumpkin pie space, some Dark chocolate cocoa powder and walnuts. This is such a good dense brownie like muffin. It is not too sweet and it has healthy things.
Just ate one with a cuppa! My granddaughters love these, so easy, moist and delicious. Just need chocolate cake mix and 15 ounce can pumpkin purée! It will be...

These are lower in fat, and since I made eighteen of them they are kinda lower in calories while feeling indulgent. High fiber too. Dark chocolate is good for you.

I think that someone posted this recipe on Facebook. Thought to try it, but never did. I have a booklet with recipes using a cake mix. There is one using pumpkin and has a crumb topping. Adding the pumpkin is a good way to add moisture and up the nutritional value too. I wonder if my hubby would eat it. Have to give it a try.

This was absolutely simple. Just stir the pumpkin in. No oil, eggs or water. I have seen a cookie recipe, in fact my friend @Marsha32 makes those. I basically keep cookies out of my house.

Even the ingredients alone are calling my name. Nothing better than the texture of a brownie!! And I do think that I have some pumpkin pie spice in the cupboard!

I think our "health food" section in the grocery sells them.A bit pricey but probably quite good.

@GardenGerty I find them now and then, thinking I may need to do some digging and see if I can't just premix and store my own. I rather like using stevia, and few mixes are made with that yet

I am mulling over the possibilities. Of course spice cake mix with pumpkin would be nice. 2 cups pureed bananas stirred into a pineapple or strawberry flavored cake would likely be very good too.

No, just stir the pumpkin into the cake mix and bake twenty minutes in a muffin tin, or maybe a little more if it is a big muffin. I added some powdered cocoa and pumpkin pie spice to make it richer. I think these would make great breakfast foods.

I am diabetic, I will eat these but make sure it is just a small portion. The pumpkin increases the flavor and the fiber. Or I guess it could be made with a sugar free cake mix. I think you are stronger will powered than I am. I would not ever tell you to do something if you know it does not work for you.

That sounds delicious! I'm going to have to try it. I made muffins once with chocolate cake mix and pumpkin in the can and it was moist and delicious. I love these kind of recipes. Easy and quick and really good! :)
