Tonight's Dinner - Green beans, potatoes and ham

I've written about this meal before, but only in the sense that it is a very simple and economical one-pot dish. I now get to share a picture of the meal I made tonight. I'm in ecstasy.
It's funny how some dishes can make you feel. There were a lot of things in my childhood that aren't things I want to really remember, but this particular meal was one of my favorites while growing up. I haven't made it in so long because my daughter won't eat ham, but I had a piece of ham leftover from Easter that I thawed and a can of beans and potatoes, so VOILA! Instant dinner.
The ham seasons and flavors the potatoes and beans while it's heating in the liquid in the pot. I did mine on the stove, but it's perfect for a slow cooker. You can use bone-in ham or boneless. It's not so much the form as it is the flavor it imparts. If you don't eat pork, you might try smoked turkey.
But, now that you get to see it (in my admittedly cheap Chinese Takeout dish), you have a better idea of its appearance. I cut up the potatoes into pieces and smashed them with my fork with butter on top. Mmmmmmm. I think I know what breakfast is going to be!

I do understand. I grew up on overcooked beans because my father didn't like the taste of fresh beans from the garden, so my mother cooked them down. That's what I was used to. I still like them that way. But, I will eat grilled and tempura'd beans if they are available.

Very good idea for a dinner although I would use either fresh or frozen beans, depending on the season. As for potatoes, I only use the real thing.
What I havenĀ“t tried (I keep forgetting) is mashed cauliflower. It seems it is much healthier and has less calories.
