How to make Leek and Potato soup

How to make Leek and Potato soup I wrote a post/discussion and many were saying how to make soup. Soup is really easy to make. So how did I make the Leek and Potato soup today? You need one Leek but could use more if you were going make more, some potatoes, I used 4 medium size potatoes. Extra Mature cheese (but that’s up to you) Seasoning salt and pepper and some very stock. Pan of water and veg stock, while the water and veg stock is heating up slice the leek and peel and diced the potatoes. One sliced and diced, add to the pan of hot water, add seasonings. Bring to the boil and then simmer until the potatoes are soft. Using a potato masher, mash the potatoes down a little. add then added some extra mature cheese, mixed it in and it ready. Enjoy, yum.

I´ll do it. I usually make an onion, potato soup ,but the onions are cut and fried en julienne and the potatoes are goarselly grated and fried. Then they are cooked in broth and cheeses squares of cheese are added at the end so they melt.

that is also a favorite of my hubbys... he makes that quite often and yes, he likes the extra old cheese too!! Actually, we all do!!

I haven't had leek soup since I was in my 20's and worked next to a German Deli. Looks pretty easy to make. I make chicken, split pea and lentil soup now and then.

Looks like something I can possibly do! Sounds good as I never tried Leek & Potato Soup. Topped with cheese is a plus

@kevin1877uk If I substitute a regular onion for the leek, I have the ingredients to make it - no maybe not, I don't have vegetable broth. This does sound like a really good soup.

I hate soup with a passion any kind of soup.I remember mum almost shoving it down my throat when i was small. While on soup,these kind of posts are not allowed here Kevin,dont want you getting into trouble

My husband likes his leek soup with some tomatoes in it also. I don't like either leek or tomatoes, so I am not an expert on how that tastes, but he loves that way.

Love, love, LOVE. Leek potato soup. We make it every couple months and freeze it for random cravings. I'm trying to grow my own leeks this year so i can make even more soup!
