How to make Leek and Potato soup
I wrote a post/discussion and many were saying how to make soup. Soup is really easy to make. So how did I make the Leek and Potato soup today?
You need one Leek but could use more if you were going make more, some potatoes, I used 4 medium size potatoes. Extra Mature cheese (but that’s up to you) Seasoning salt and pepper and some very stock.
Pan of water and veg stock, while the water and veg stock is heating up slice the leek and peel and diced the potatoes. One sliced and diced, add to the pan of hot water, add seasonings. Bring to the boil and then simmer until the potatoes are soft. Using a potato masher, mash the potatoes down a little. add then added some extra mature cheese, mixed it in and it ready.

I´ll do it. I usually make an onion, potato soup ,but the onions are cut and fried en julienne and the potatoes are goarselly grated and fried. Then they are cooked in broth and cheeses squares of cheese are added at the end so they melt.

that is also a favorite of my hubbys... he makes that quite often and yes, he likes the extra old cheese too!! Actually, we all do!!

Looks like something I can possibly do! Sounds good as I never tried Leek & Potato Soup. Topped with cheese is a plus I love cheese. Yum!

@kevin1877uk If I substitute a regular onion for the leek, I have the ingredients to make it - no maybe not, I don't have vegetable broth. This does sound like a really good soup.

ah I wondered if you used stock, that does sound tasty, I'd want to try it with cauliflower though not potatoes
