I LOVE Carrot Cake, and Im going to make some for the first time. Do you have a favorite Carrot Cake recipe? Is so, post it so I can try it out.:)

Carrot Cake This one is not good for the diet but then what are diets for if not for breaking ... Recipe Mix 1 cup of oil, 1 cup of brown sugar and 3 eggs. Sift and fold in 1 1/2 cups of self-raising flour, 1 teaspoon of bicarb soda and 2 teaspoons of cinnamon Add 250 grams of grated carrots and 3/4 cup of chopped walnuts. Bake in 20cm round baking tin at 180 C for 1 hour. [This is my favourite part:] Combine 250g of cream cheese with several tablespoons of honey (to taste) for cake icing.
