Shrimp and Veggies Cooked in Coconut Milk

I don not know why I love recipes using coconut milk. Maybe because of the taste, and because coconut is always available here.
So for dinner, I cooked shrimps with squash, squash tops, eggplant and coconut milk. I just added a pinch of salt and little water and it's done after few minutes.
It is an easy recipe and so nutritious too. Just make sure the diced squash fruit are tender before adding the sliced eggplant and then the young squash leaves, then the coconut milk.
Do you have a particular ingredient you always wanted to include in your recipe?

Oh you have a different way of cooking it. We also love that dish. Squash, string beans, bitter melon and coconut milk.
In our way of cooking, we let the coconut milk boil first before we add the vegetables. But we stir continuously the coconut milk so that it will not become watery.
I always want to add something new to my recipes. I watch cooking shows to learn more.

I love coconut milk in curries too, prefer it to the sweet coconut dishes.
Do you'll have coconut chutney, grated and mixed with garlic, chillies, curry leaves etc?

Yes, all seafoods can be cooked in coconut milk and it tastes so nice, even fish.
