My Lunch is Awesome!

I decided to make a baked potato for lunch, with stuff on it. Ten minutes in our old microwave, a little water in a bowl, put the tater in the bowl and cover it with another. I have butter, sour cream & cheese and hot sauce on it. It tastes yum! I was wishing we had some green onions I could cut up and put on top, though.
What do you like on your baked potatoes? Do you ever have them for lunch?

@CinnamonGrl Right, I'll tell her. She said someone else blocked her too, so perhaps there's something wrong at her end.

@CinnamonGrl Ok, she's just got back to me and said that it must have been a glitch as she's not blocked anymore. Sorry to bother you.

@CinnamonGrl I used to cut up the potatoes and fry them with the skin and make potato wedge fries.

Sounds yummy but everytime I try to microwave a tater it comes out tough.
I like butter and sour cream on mine. Sometimes a little ranch dressing.

@CinnamonGrl So, a bowl over a bowl, with a little water in the bottom. I may have to try that soon.

It took me a long time to figure out a baked potato in our microwave. If I don't do it exactly as i described in my post, it doesn't come out the right consistency. Ranch dressing is good, too. I've done that before on my potato.

I had baked potato multiple times but I see them more as a snack or an appetizer because the main staple of Asians is rice. I like adding dried basil on my bake potato. it goes well with cheese.

@CinnamonGrl You can use fresh basil if you like but you have to mince it. If you want to go low carb, Golden sweet potato is a good alternative.

We would eat more rice if my mother liked it. I mostly fix rice for myself at lunch time. Dried basil sounds pretty good, I've never tried that.

I love to eat them when we are traveling in England. They are called jacket potatoes and they put the greatest things on top, curry, tuna salad, cheddar cheese (hubs favorite) chili and coleslaw. Believe it or not I have tried them all and they are all good!!

I fix potatoes more often than rice because I live with my mother and she doesn't like rice. I like it with chicken.

@CinnamonGrl The next day, I had one for lunch with cucumber, tomato, olives, sour cream and Greek dressing. I didn't have any Feta or I would have used that. We have potatoes in the garden, so I am going to think of more of these!
