Cooking with coconut oil for the first time

Everyone I know seems to be using coconut oil for cooking. I guess it is supposed to be healthier for you. I bought a jar of it a couple of weeks ago and tonight I'm finally getting around to using it. Lesson #1: Do not keep it in the refrigerator. That makes it super hard and almost impossible to get out of the jar.
I scraped some out and I'm using it to saute carrots that I cut up into coins. I tasted one of them while it was cooking and there doesn't seem to be any noticeable coconut flavor to the oil. That will be a good thing with my husband. He would object to coconut-flavored carrots.
Does anyone here cook with coconut oil?

I've heard so many good things about coconut oil but have never tried it. Keep us posted on how it works...are you using it for health benefits rather than butter or oil?

I haven't before, but I would try it if it doesn't flavor everything differently.

The only thing I ever had in coconut oil was popcorn and you could taste the coconut flavor. I really liked it.
