Cooking with coconut oil for the first time

Everyone I know seems to be using coconut oil for cooking. I guess it is supposed to be healthier for you. I bought a jar of it a couple of weeks ago and tonight I'm finally getting around to using it. Lesson #1: Do not keep it in the refrigerator. That makes it super hard and almost impossible to get out of the jar. I scraped some out and I'm using it to saute carrots that I cut up into coins. I tasted one of them while it was cooking and there doesn't seem to be any noticeable coconut flavor to the oil. That will be a good thing with my husband. He would object to coconut-flavored carrots. Does anyone here cook with coconut oil?

I've heard so many good things about coconut oil but have never tried it. Keep us posted on how it works...are you using it for health benefits rather than butter or oil?

I'm really trying it just to try it. I need to do some research on the health benefits as I honestly don't know anything about it other than it is supposed to be good for you.

I haven't before, but I would try it if it doesn't flavor everything differently.

I do! I love cooking eggs with coconut oil. I feel better eating them knowing that the oil I used has added health benefits.

The only thing I ever had in coconut oil was popcorn and you could taste the coconut flavor. I really liked it.
