I made dinner for 8 people with around $3. My lentils.

I don´t live in a country where a dollar goes a long way. My country is an expensive one and groceries eat up a lot of out monthly income.
When my husband, the main provider, died, I thought how could I live like before with less than half of the money I used to have.
I cut the money I spent on beauty parlours and learned to dye my hair. And I do not go to Starsbuck or the like but rather drink coffee at home.
Food was an important item. I like to eat well so I learned how to cook less expensive, yet gourmet, dishes.
Today I cooked lentils. I don´t buyu cans of lentils and add other cans. I buy at a smaller price dry lentils and put them to soak overnight.
Then I cooked them in milk, no salt, in my pressure cooker for around 10 minutes since the pressure began.
Meanwhile I had diced and caramelized onions with cut up bacon, added crushed garlic, ground sweet pepper, smoked hot pepper (a bit), salt and pepper.
When I opened the pressure cooker, I used the hand blender to mash part of the lentils and then added the other ingredients.
I checked on the salt and it was ready.
Sometimes I put some parmesan cheese over it or a cut up hard boiled egg.
When my family arrived, I said I could understand Esau in the Bibble when he went for a dish of lentils after a long hunting day.

One of our favorite family dishes is lentil soup, filling and delicious and very inexpensive. Your dish sounds delicious.

@122037 I have found that dishes with too much meat are a lot more expensive, so I´m using less of it.

@marguicha Respect! But you really make a cheap meal for 8 people. I spend about $3-4 dollars for a meal that cook by myself

It is much better to cook from scratch and much cheaper than buying ready made food which you do not know what rubbish is in them.

It really takes some wise judgment when you want to save or adjust to a certain budget. One can cook cheap but healthy dishes like what you did by being creative.

I think so too. Yesterday I cooked some of the lentils (no onion and the spices added) and froze them. They can last for months.

I think what you did is healthier for you and your family. Canned Vegetables are quite bad given that they are extremely processed so in my opinion, you made the best decision.

I seldom use cans to cook. Some months ago I made hummus for some friends and another friend brought hummus too but she had made it with canned chick peas. Everyone said that mine was far better.
