pancakes with coconut flour

I made my pancakes partially with coconut flour today. It is good, gluten free and makes delicious pancakes, but it makes them quite thick. I didn't use a lot of coconut flour only the one third of the mix that is recommended. Anybody have any secrets for cooking and baking with coconut flour?

I've never used it but I will give it a try. The flavor must be awesome.

I have never used coconut flower, but my daughter in law uses coconut oil in her muffins. The flavor is awesome!!

I use coconut oil to cook with sometimes...It is supposedly one of the good for you oils...but of course like everything, there are the naysayers.

I didn't even know there was such a thing, that's great for those who need gluten free.

Yeah, lots of times when you see those gluten free or paleo recipes or other low carb recipies they are using coconut flour.
