Spaghetti Sauce

I made some spaghetti sauce this morning and I find it somehow bitter. I don't know what I did wrong.
I used to make a pretty good spaghetti sauce, according to my family, but I haven't done it for quite some time now. I guess I lost my touch.
So, we had the sauce for lunch and I found it too bitter. Also found it very filling, although I just had a small serving. Now I feel so full and I hate that feeling.
Now, is there someone here who could tell me the secret of a "not bitter" spaghetti sauce? I would greatly appreciate a tip or two.

I always put in a little sugar and cinnamon to kind of cut the acidity. But a lot of the time I use those seasoning packets as well.

I have never made that myself, I use spagetti squash instead of noodles, stay less full. Anyways one of these days I will have to try making my own sause

It much depends on the tomatoes. Why don´t you add a tiny bit of sugar to it?

@marlina I give up! Maybe more water? I don´t mind experimenting when I have a problem in the kitchen. I could even add a touch of ketchup.

I never use sugar in my sauce because I can feel the taste, but I always add the salt only when the sauce is almost ready, never at the beginning or it will be acid. To remove the bitter from tomato sauce, add a bit of backing soda, no more than 1/4 of tablespoon, stir, test and add some more if it's still bitter.

Sometimes the peppers can be bitter. Add some sugar, and that should take care of it. About 1/2 teaspoon per serving. Yikes! I guess you have already heard that a few times, lol.

Never made a spaghetti sauce myself.
But..I know how pathetic it feels when you already cook good but this time it wasnt made well...
I do it EVRYTIME I have good amount of audience..

I always use a can of tomato sauce, and a can of sloppy joe sauce. the sloppy joe sauce will help get the bitterness out, and it already had onions and bell pepper in it. My kids (even my teenager) loves it. Hope this helps.
