Delicious Minestrone Soup

We went out for lunch today as the kids have spent the weekend at their Nans, it was about time me and their dad treated ourselves to some 'us' time and while we didn't exactly push the boat out we did try a new place that has recently opened.
The roast dinner was so-so - loads of delicious meat and veg, but no better than other restaurants nearby really. What WAS excellent however was my starter, a chunky minestrone soup which tasted amazingly home cooked and had tonnes of perfectly cooked veggies in it. I wanted to ask for seconds but didn't as I knew I had my main course coming - I did take a second bread roll so I could get every last smear out of the bowl though, and I don't care how common I looked doing it!
I really must try and get this recipe, I'm salivating now just thinking about this amazing soup!

That's great that you got out with your husband and had some good soup! =)
I hope my husband and I can go out for a date one of these days... Without family nearby or a babysitter that is kind of tough. I keep hoping anyway though! Lol. We haven't been out together in a LONG time.

I do find that the soup I get when I am in England is usually amazing, I love things like Parsnip and Pear.

Would be interesting to know if it was made there or bought in.
My hotel makes a lot of its own soups but some are bought in...I know our minestrone is bought in
They made a nice one the other day which was parsnip and apple and it was nice even though I hate parsnips.
