Cooking vegetables for my breakfasts

I just spent some time chopping up veggies for my breakfasts. Every morning I have eggs (usually scrambled, sometimes omelet) with vegetables. What I do is chop and cook them all one day ahead of time so they are ready for me to just toss into the eggs in the morning when I am cooking. Today I chopped: onion, green bell pepper, zucchini, eggplant, and tomato. Right now they are all diced up and cooking with salt and pepper in my big saute pan on the stove. That will get me through the next week.

@NJChicaa That is what is nice in having a variety of vegetables, using different ones with the eggs for different meals, keeps it a good variety, so it doesn't get boring.

Sounds nice. I need to eat more veg! I am having a halloumi and mushroom spinach sandwich for dinner.
