The cauliflower rice came out great!

Next time I will skip cooking the onions in the pan first. They were totally lost in with the cauliflower rice and I didn't detect any onion flavor either. I definitely needed to add liquid to the pan to cook the cauliflower. You could use water but I used chicken broth for extra flavor. The riced cauliflower had great texture and did indeed work as a substitute for rice in my meal tonight. It was so much better than the frozen steamer bag version.

I have always wanted to try cauliflower rice. Being a big rice eater, I am kinda picky with it. I even went through lots of different brands of quinoa before I found something that is comparable to the actual white rice. You can call me a rice bunny, being asian and all

It's not going to fool you into thinking that it is rice, but it does have a bit of a similar texture for those nights when you're not having rice.
