New Year, New Food

It's the 5th day of 2017 and the only leftovers from New Year are down to biko and lumpia. For several days, we were just reheating pork adobo, pancit canton, chopsuey, grilled tilapia and frying lumpia for lunch and dinner to go with the steamed rice. For breakfast, merienda and dessert, we ate kakanin (puto, ube halaya, biko), macaroni salad, fruitcake and pandesal. For the lechon manok, we cooked it in Mang Tomas liver sauce, liver spread, garlic, pepper, bay leaves and cane vinegar. Looking back, we should have used the microwave to reheat food so they didn't end up soggy. It would also cut down on LPG gas, pots, pans, ladles and tongs to wash. For the kakanin, sometimes I would heat them on a grill pan, or create a makeshift steamer by putting a flour sifter inside a small saucepan. Do you still have leftovers? Do you just reheat them or tweak them a bit? Can you eat them cold? For Filipino mylotters, how do you reheat kakanin? How do you make ube firmer? Is the texture different when you use coconut milk versus condensed milk? Pictured above is my mother's past biko (sticky/glutinous rice, coconut milk and brown sugar). Lumpia (spring/eggrolls), adobo (pork or chicken cooked in soy sauce, vinegar, garlic and pepper), pancit canton (stir-fried noodles with veggies), merienda (afternoon snack), kakanin (Filipino snacks or desserts made from root crops, sticky rice, coconut milk, rice flour, brown sugar), pandesal (common Filipino yeast bread).

Out of all those food you mentioned, I'm least familiar with kakanin... what is root crops? Is it the same or similar to cassavas? And your mother's biko looks simply delicious...

Cassavas are root crops. Kakanin is usually made from sticky rice called Malagkit.

root crops and tubers, i guess - ex. cassava, taro (gabi), arrowroot (uraro), sweet potato (kamote), purple yam (ube), etc.

@magallon I see... I was just following what hereandthere said that kakanin was made from root crops, sticky rice, etc... And I wasn't sure before what root crops were...

None. Everything was consumed that night (New Year's Eve). When I'm at my parents' place, I make sure that food will just be enough for that event/night.

@rina110383 i butt heads with my mother about the same things. she tends to overbuy, reasoning that they won't spoil, but she forgets about them, so i have to find ways to use them. she also likes to try new stuff or experiment in the kitchen. if she didn't like the taste, or the result isn't good, she will ignore it then blame us if it's still there after several days.

i would prefer it that way, too, but you know how some mothers are, so i had to take charge of "planning" the leftovers.

@hereandthere She always complains that I should not be the one deciding, and I respond by telling her that there are a lot of people who don't even have anything to eat. I always tell them that in spending money on food, buy and cook something that's enough for that meal because who knows something bad might happen the day after requiring them to shell out a huge amount of money. Besides, leftovers just go to our dogs because people there don't eat that much. I find it a waste of money. Soon, my parents, siblings, nephews & nieces who are spoiled brats will realize the importance of saving money and spending just enough.

This year , we didn't have lots of prepared foods . I only turboed chicken and ham . We ordered two trays of lasagna and we have biko too , given to us by the one where we ordered lasagna . Then , we had a champagne and coke . So, it's the lasagna that have left over . But by the Jan 1 evening the lasagna was already completely consumed because it's the fave of everybody . We didn't have much food for New year because our electricity was just restored after five days , on Jan , 31 nearly noon . So , we are already sold with the idea not to prepare so much foods anymore . But at least we wer still able to have the media noche , though lesser food .

I had very little leftovers and I never serve them as they are, I recycle in other preparations.

@hereandthere That is because we have 5 hams last Christmas. 2 from my eldest daughter, 1 from the youngest and 1 from the twins then another 1 from me... All of it was given by the office where we are working..

We went to my parents' house for New Year's Day . . . and we were able to take some leftovers home. It's still sitting in the garage fridge - we need to eat them up quickly. There is a certain rice cake soup we eat traditionally with various things in it - but there is never leftover of that . . . not good as a leftover to heat up. There are also various rice dishes and such that are usually at room temp . . . but since it had been in the fridge, I'll just leave it out before eating (not something to heat up, definitely not in the microwave). My daughter made the dessert - but we let everyone else have those leftovers (we don't need anymore sweets!).

as in, salabat? hehe. i soak ginger in hot water with cinnamon and honey when i don't feel well. with biko, i want plenty of budbod (latik). do you have malagkit (glutinous rice) there?

@hereandthere Yes we can also buy glutinous rice here and I have tried to make biko .. but I also like it with plenty of latik which I don't know how to make .. and plus my biko was not as good as the one my grandma used to make ...

Wow. One of my favorite. This time of the year, meats are the most popular, but Id rather eat this than the hams which are staple for the Filipinos during this time of the year.
