Alamang, a particular type of shrimp paste, is one of the most popular dips for unripe mangoes in the Philippines. It has a salted taste which lessens the sourness of an unripe mango. There are different versions of alamang, some have a blend of sweetness, and there are also spicy ones.
The slices of mangoes on the picture might look ripe already because it's already yellowish but it's actually just close to ripe or "manibalang" in Tagalog.
If alamang is not available, I just dip my unripe mangoes into salt or soy sauce.Mango is really one of my favorite fruits.
