Grilled chicken with rice and salad for a diet.

I have told you that lunch is my biggest meal. Usually I eat more and many times I am sorry after that. Now I´m behaving and I had grilled chicken (all fat fell out and I did not eay any grease). I added a potato covered with foil and white rice. As a salad we had fresh cooked spinach and carrot. I´m sure that if I keep on eating like this, my insulin resistance problems will go away and so will part of my extra kilos. What are you having for your main meal today?

Did you know that the rice will be fewer calories if you add coconut oil during the cooking then put it in the fridge for 12 hours? It tastes the same but isn't as fattening! The chicken is great diet food. I am eating a special soup right now as a snack with chicken in it and it only has about 100 calories. Lots of vegetables in it and very satisfying. I just had to have something before lunch or I would go break into my DILs chocolate stash! Does your insulin resistance require a lot of carbohydrates (starch)? I ask because you included a potato with your rice. I'm not sure I understand insulin resistance.

I've not heard of that about the rice. The use of coconut oil is on the rise as well as it's uses. I might really need to invest and educate myself on it more.

@marguicha People here tend to have a whole, big potato and at least 1/2 cup of rice. They pour soy sauce or salt and butter on the rice and make the potato "healthy" by loading it with cheese and a little broccoli. That's why I thought you might be overdoing the carbs. You're smart, choosing to eat what you enjoy in small portions.

No. I should not have a lot of carbs. The potato was a dwarf potato and the rice only a spoon of it.

That sounds like a very healthy meal indeed. I am also on somewhat of a diet so i have been loading up on salads. Had a protein bar for breakfast. Best of luck to you!

My diet is also a diet because I´ve had an IBS. I have to eat food without a lot of spices.

@TheInvisibleMan Whatever I have on hand. But I usually make the lasagna sauce with beef and save it frozen until I want to put it together.

Hi. I myself am not sure my main meal today. But nonetheless I am trying to eat healthier myself. Kale salad could be in the mix. Possibly a stir fry. It is sometimes hard to eat right. It can take a lot of discipline. I do know that darker vegetables and or salads provide good vitamins that could help aid with your situation. I imagine. Good luck to you.

Making chicken thighs and homemade spanish rice tonight for dinner. I have a daughter who lives on rice if she could. It's usually a crowd pleaser in my house and well chicken is inexpensive depending on the cut.

Nice lunch for you for sure. I put Garbanzos today with greens. He eats the Garbanzos but does not like greens that much. I don´t put a Dessert as to not encourage him but he eats that anyway. Do you ever feel like giving up? Congrats on your Diet meant to say.

Squeeze some orange juice and pepper on the chicken. The taste is yummy
