What will you be serving for Easter dinner?

We are non-traditionalists - meaning just because ham is traditional for Easter we do our own thing. Since we moved south 17 years ago holidays are just the two of us. We don't have to impress anyone or serve what's expected. Even when I was a young adult my parents always had Easter dinner and my BIL was not a ham fan by any means (strange since he was Polish!)...anyway. I guess that is part of why I don't feel that I have to eat what others eat. My husband and I have had shrimp for Christmas Day or chicken on Thanksgiving. We pretty much eat what we want, holiday or no holiday. Tomorrow will be: Prime Rib - he gets an end cut and I get the next cut Baked Potatoes - real baked - in the oven not the microwave Succotash - corn and lima beans Dinner rolls - type yet to be determined Chocolate Pudding Pound Cake - probably later in the evening What's on your menu for Easter Sunday? Traditionally we only have an Easter lunch, usually dinner is very light. I am not going to serve lamb, because those little animals are too cute and I feel bad eating lamb. I will prepare fettuccine with asparagus and shrimps followed by an Italian savory cake that is filled with ricotta, spinach and boiled eggs and the traditional Italian cake "The Dove", that is also a symbol of peace. As we are only the two of us I am pretty sure we are going to skip dinner.

@AbbyGreenhill One cake is a savory cake, I think you would call it a pie. We only have one sweet cake and we will have only a very small piece.

I have only tasted lamb once in my life and didn't like it...so I won't ever be having that. Your pasta dish sounds good. We are having lemon shrimp and pasta tonight. My husband just cleaned the shrimp. Two cakes, hum....I bet you just have a small piece of each. Your niece isn't coming?

we are not having any big dinner.But one think I know.Going to have ice cream for lunch. I would love to have fried clams.they can have the ham.I feel so piggy about this.

That looks real good. I'm having leg of lamb, mashed potatoes, and asparagus. I was planning a dessert, I don't know if I'll have the time to make it. We'll see.

We've having leftover mornay for lunch and probably pick up something on the road (but not roadkill) on our way back from the airport with the man who is coming to inspect the bus. So not very traditional either!

You menu for tomorrow sounds delicious. We usually have whatever we feel lie. Last year was lasagna, this year we felt like ham so ham it is.

We eat sandwiches lunch, always have and it's usually ham...so we do get our fair share of it all year long. My husband could eat lasagna every day if he could - that's the 1/2 Italian in him.

I am like that, too. When I was married we had make it yourself pizzas one Easter and the kids loved it. Another year we had prime rib since my then husband loved prime rib. It's good to be versatile and do whatever pleases you and your loved ones! I'll have ham and traditional things tomorrow at a friends' house. My family would normally gather at my ex's house but his wife is working this year and the last time he hosted a dinner for us all without her is was very stressful for him.

@AbbyGreenhill Oh, it took awhile! I was very hurt and resentful. I moved across the country for 5 years to heal my spirit, examine the real reasons we divorced surprise, it wasn't really all his fault) and come to terms with myself and the person I wanted to be. Now everyone is happy. I had to grow up quite a bit and accept things I could not change.

@dragon54u That's great....not everyone can or wants to - we had no kids so a clean break was the best - as a matter of fact the day we went to court for the divorce he picked me and I rode with him...of course I didn't find out until years later that his girlfriend was very preg. by then and they were getting married the next day.

Nothing special here, the only traditional thing we do at Easter is hot cross buns and chocolate! Hardly meals. But we are hoping to go out to dinner with our son tomorrow, Monday.

We're having the traditional baked ham. There are 20 of us and its the easiest to cook and serve buffet style. Everyone brings s side dish which ma!es things easier for me. I do love your dinner menu and haven't had prime rib in ages

Thanksgiving we always have turkey. And Easter we always have a smoked shoulder ham. But for christmas, we've had turkey, roast beef, and even lasagna. Tomorrow we're just having the ham and potatoes.

This year I am actually making the traditional Easter ham but in previous years I have made pot roast, lasagna, etc... whatever my family wanted. I feel as long as we have holiday dinners together as a family and it is something everyone agrees on that is all that matters.

That's right, there is no law that says you have to cook certain foods. Enjoy your ham. The other evening I made a ham steak and it wasn't Smithfield...whatever brand it was - it was soo soosooo salty.

We are having baked ham because it is one of our favorite meals. We will also be having baked sweet potatoes, carrots, and Brussel sprouts with lemon tarts for dessert

I love Brussel sprouts and my husband can't even stand the smell so I very seldom make them. Enjoy your dinner, sounds delish.
