Carpathian Rabbit Sausage - Kolbasa Krolika Karpatskaya Categories: Game, Ethnic, Ukrainian, Hungarian, Maindish Yield: 8 servings 6 lb Rabbit boneless rough ground 1 1/4 ts White pepper 1 ea Garlic clove minced 1 1/2 ts Sage dry rubbed 1/2 ts Cinnamon ground 1/2 ts Ginger ground 3/4 ts Nutmeg ground 1 tb Onion minced fine 2 tb Corn oil 1 1/2 Apple peeled & cored Dice apple to 1/8" & set aside. Mix first 8 ingredients together in alarge bowl. Cover & refrigerate for 8-24 hrs. Pre-heat skillet. Run mixture through a grinder or food processor. Add apple & mix well. Form 3" patties 3/4"thick. Fry over med-heat. for 5-6 mins. per side until well browned. Serve with eggs or potatoes. *NOTE: You may also stuff casings with this mixture for links.
