Leftover Mashed Potatoes

I like to make extra mashed potatoes, so I can make tuna & potato patties the next day. My mama made these for years, but now she doesn't do the dinner cooking anymore, so it falls into my unworthy hands. I've learned to make pretty good ones though. It's just mashed potatoes with a can of tuna, egg, bread crumbs, a couple tbsp. flour,, chopped onion, garlic & lemon pepper. Sometimes I put in a bit of lemon juice. Then you just mix up all lhe goo, make patties and roll them in flour, and fry them till the "crust" is nice and brown on both sides. Top them with nice melting butter - we think they're delicious! Anything special you like to make with leftover mashed taters?

I make potato cakes with cold mashed potatoes, a little flour, salt and pepper, sometimes some cheese, onions and bacon, roll them in flour and fry in canola oil. Very similar to yours, but I haven't tried it with tuna.

Ooh the bacon sounds really good, I think I'll try it that way next time. How do you do the cheese, do you shred it? Sounds awesome!

I mix them to chopped tuna, some capers a bit of mayo, I roll in my hands to make small balls and serve cold.

@CinnamonGrl In summer those little tuna balls are very good, served with a lettuce salad and a bit mayo they are a good lunch.

Ooo that sounds lovely!!! We make just the regular Irish Tato Cakes..just the way you make them but no tuna or lemon or garlic or onion..they are just butter flour tatos and fry them up in an iron fry pan..so good.

Yeh, I remember my mom making them like that too, now that you mention it. She didn't always put the tuna in.

@CinnamonGrl i reckon'd so. prolly a good thingy coz the flour'd made me quite ill, lol. i doubt ya 've almond 'r sorghum flour 's a sub 't'cher place :)

That sounds very good. I have made mashed potato patties and one time stuffed them with some ground beef.

I never thought of putting ground beef in potato patties. But come to think of it, we can add whatever we want too.

We do the same thing with leftover mashed potatoes. Those tuna patties have been a family favorite in our house for generations.

My Mom used to make what she called potato pancakes. It's very similar to how you make yours less the tuna.

Yeh, I was reminded that my mom used to make them plain sometimes, too. We love potatoes in every form, I should think of doing tthat as a side dish more often.

It's one of our standard dishes around here. Actually it's part of the "rut" i'm in cooking-wise. We do still love them, but I need to vary my menu lol

I have never heard of tuna & potato patties. My mom makes salmon cakes some days and they are good. I do like to have left over mash potatoes though so I can have them for lunch the next day. I like to add cheese and garlic into them.

@rebelann Nah, I love potatoes but I am not that fond of tuna mixed into anything other than mayo and pickles. Perhaps with salmon but I am still leery of that too. Now some potato cakes with onions! I could go for that.

That sounds delicious. I always make more mashed potato that I need, then freeze them just as they are. I put them into one meal sized portions, and it saves that horrible task of peeling the potatoes every time.

I mix them in equal parts taters and regular dough ingredients for bread dough - when I have a kitchen.
