I actually know this dish! I am in the US and don't know a whole lot about Filipino food, but we have many Filipino friends. Most of our Filipino friends serve your typical American fare at get togethers. But at one kid's birthday party, one of the Filpina moms ordered sisig in a burrito form from some fusion restaurant. I took one and my other Filipino family friends there looked at me funny. They asked me if I knew what that was . Of course I did not, and they informed me . Pig ears are not typical at least where I am, but I know I have seen them at the international markets. It's not something I'd like to eat a lot, but I can say I tried it .

@leninquiblat I only had it that one time - I can't exactly remember except that it was kind of chewy (I think). I am adventurous with food . . . at least I will try to eat anything .

Actually the dish has many variations but the popular one's are usually sizzling or served in a sizzling plate, the ears are barbecued first, yes lots of hot sause and sometimes pork brain added.
If you want the original it's in Angeles Pampanga I think where it became very popular with U.S. Service men in the former U.S. Bases.
