What did you have for lunch today? I'm ready to soar!

As some of you know, I tend to graze for breakfast, and that means that lunch is important to me. I spent the morning writing progress notes for my work with the "troubled " kids, and all I had to eat was some lox, some cheese and a slice of avocado. Classic Horse AM grazing.
But at about 11:40 AM, I realized I was starving so I cooked up what was left of last night's Thai Red Chicken Curry. I added a bit of water and a bit of olive oil, so it would cook down to its original consistency. It was served at Noon, and now I'm ready to soar off to work and print out those notes.
Did you have a good lunch today? Inquiring minds want to know!

@spiderdust I shouldn't say anything until I try one today. The ones I remember were salty, chickeny, best hot, and yummy.

@TheHorse I miss the cheesy pot pies they used to make.. they make a breakfast ham & cheese one now, but this one was a cheesy vegetable pot pie, with broccoli and carrots and potatoes.

We had beef " pochero" this morning, it's a Spanish soup dish that basically consists of beef with bones, saba banana ( a different variety used for cooking), tomato sauce, potatos, green beans, pechay ( a type of leafy green vegetable, yes eaten with hot rice.

What makes it Italian style? Pancetta instead of leftover ham?

Just a bowl of soup. The stress of the morning entirely erased my appetite. I avoided a total meltdown by the tiniest margin. It was close.

@Morleyhunt Yes, depression (re: your dad.) I'd feel pretty frustrated after a day like yours as well. I'd also take action and write a letter to the parking enforcement folks, letting them know what happened. It's a matter of principle. I always feel better after I take action, even if it doesn't work.

@TheHorse my father fell and broke his hip a month ago. This week he first assured us that the hospital is just waiting for him to die. Then he decided he is waiting to die. He isn't eating and is apathetic (depression?). The parking costs at the hospital are ridiculous so I've opted for on street parking...but that's a maximum of 2 hours at $2.50. Yesterday the meter took all my coinage ($3) and gave me a total of 30 minutes....on getting out to my car after waiting for 30 minutes or more to have a nurse give my father the care he desperately needed.....yup....parking ticket....

@TheHorse Maybe. I just found out that it's National Waffle Day, so maybe we'll do that for dinner.

My 2 girlfriends and I ate pancakes, bacon and sausage for our 10AM meal. Sort of an in between for breakfast and lunch. We had no idea what to make and I said OK let me cook you a good old American Breakfast. They started to laugh because they had never had this before.

I like our lunch for today it's pork blood stew. It does not look good because it's all black but it's delicious. Nice to know what's going on with your day

@TheHorse Pork cut into cubes cook with it's blood and we add tamarind to make it sour. It doesn't look tempting but many people here actually like that and even dip rice cakes on them

That lunch sounds wonderful. I love Thai food. Lunch was no big deal for me today but my daughter made chili for dinner. I just finished off my helping.

@TheHorse - No. My husband's got a heart problem. We don't do beef any more. Ground turkey. We learning to live with the dietary adjustments.

@TheHorse Like you, I had leftovers from last evening's meal. The meatloaf was pretty good for a warm, meatloaf sandwich today. Along with a couple wedges of Claussen's pickles, it made a pretty tasty meal!:)
