Rainbow Cake

# 95 Isn’t that a great looking cake or what? There are 5 layers of bright-colored sponge cake making up this Rainbow Cake. The colors are purple, blue, green, orange, and red. The delicate icing decorating the cake also has the same colors as the cake but in a more pastel or softer shades. The design is quite simple yet pretty. The cream in between each layer of the soft sponge cake is a mixture of custard and mascarpone cream. It has also a slight taste of lemon juice. The cake has just the right amount of sweetness. Even the icing is soft and not too sweet on its own. The whole cake is soft and creamy with each bite – it has a delicious combination of sweet, only slightly sour, and creamcheese-like taste (not cheesy). The only chocolate in the cake is the Happy Birthday tag on it… Even that is white chocolate which, being lacking in cocoa powder, some people do not consider it as chocolate. But a thought came to mind as I looked back to this cake… Obviously the cake was bought not for the same reason but wouldn’t this be a perfect cake to celebrate the ‘Yes’ result of Australians vote for the same-sex marriage?

Yes, I think most of the efforts to make it was on the multiple-colored layers...

@JudyEv Oh yes, I know marble cake... The mixture of the different colored dough gives it the marble look...

We used to make a rainbow cake but it was a bit different. We'd make a basic cake dough, divide it into three, colour one red and one green then put spoonsful of the different colour in the baking tin. Actually I've just remembered it was called a 'marble' cake rather than a 'rainbow' cake.

The cake did go rather quickly when we had it... I think because it was so soft and light... Even with the 5 layers, it was really easy to finish up a big slice of the cake...

I'm guessing it has just the average calories of any other sponge cake... Maybe around 200-300 calories a serving...

The bright colors of the layers made a different... Probably would look just plain if I didn't cut the cake to show that in the picture...

Yes, with bright and sharp colors the way the layers have, it's hard to imagine there was no artificial colors involved.

@sishy7 It's impossible to create those colors without using artificial colors. You can do this at home, but it takes a lot of time to extract the colors from the vegetables.

@DaddyEvil Oh, you're terrible... Good thing no one said that to me (it's something that I think, myself) so I won't need to tell them all that... Anyway, I've been told that I need to shorten my description before - something like telling me 'simple is better' which I don't mind and perhaps even agree... But I just can't help it that sometimes I just go round and round and round with my words or sentences...

@sishy7 Dearheart, I have two comments to make here... I deleted over half of my original comment here. I was mad/upset that someone might say something like that to you, but didn't want you to think I was directing those emotions at you. (You would have laughed, I think, but am not sure, so deleted it. I also offered to do the rolling, turning and shoving, if that person needed help with it. ) The other comment is actually a question and my own opinion about this... Have you ever noticed me cutting anything I am talking about short in an attempt to improve what I've said? (Other than where I just admitted to deleting part of a comment to avoid offending you.) I seriously doubt that you have. The more detail/description given normally increases the readers comprehension of what we are trying to help them see.

It's good to take a picture of... I understand, you only like yellow cake if I'm not mistaken, no? I'm surprised yellow wasn't one of the colors for the layers... They should make it 6 layers with yellow between the orange and the green, ha!

We just saw a video on Facebook on how to make a rainbow and clouds cake like a couple days ago . . . lots of work but the results are too cute - yummy and so colorful! And I agree . . . it's the perfect cake to celebrate the vote!

i've seen rainbow cakes here, too, but haven't tasted one. i don't know if it will taste the same as you described, but i really y like that yours has a lemony taste. the problem with me is if any dessert or snack isn't sweet enough, i'd keep eating it until i'm stuffed!

Those are very trendy at the moment. When I was little my Mum used to make me a three-layer birthday cake, one layer plain sponge (yellow), one layer pink and one chocolate layer, I thought it was terrific!
