Holiday dinner Delemas

Holidays are coming up and this is the greatest excuse to get everyone in the family together to eat. Fairly easy, as even though not everybody's dish is the favorite dish most people can be at least convinced to eat most things at the table. This falls apart fairly quickly when you have a wide variety different diets and allergies to accommodate.
Even within a small family having a variety of different diets and make finding the perfect dinner for everyone quite tricky. My small family consists of one vegan, one person with a large list of allergies, one person who has a few sensory issues and two extremely picky children. In addition to this, two of my family members need to eat a lot of meat in order to be healthy, while I completely avoid all meat and animal products. Normally I would be in a total tizzy, but I have found the best way around this issue. Side dishes are now my best friend.
Using side dishes it is possible to make a mix and match meal that can accommodate a wide variety of people and be absolutely delicious without driving whoever is cooking crazy. I am planning on having a small Yule celebration as there are not a lot of people who are able to come and this is not a very large holiday for me.

We made too much and now are having leftovers for the next week.
