Tonight we are having pinto beans, pork chops and collard greens. Nothing too exciting but something I've wanted for a few days. Well the pork chops at least, the beans are just leftover from last night and the collard greens are because collard greens are delicious. What are you having for dinner?

@CoralLevang I’m still trying to come to terms with kale and failing. I’m from the NorthEast. I don’t think that collards and I will wind up loving each other.

I haven't even seen collard greens in the stores here, now I want some. Well, at least I have the beans, they're almost done.

They make canned ones, but they aren't nearly as good.

I've tried the canned ones but I prefer my own @thislittlepennyearns besides the dry beans are cheaper than the cans when ya do a tally.

Eating animals make me sad, pigs are just like dogs. I ate Vegan schnitzel and next to it Eggplants salad.

@thislittlepennyearns It's being made of Soy which it's protein, or Seitan which it's protein of wheat. I buy these raw, put inside of tasty marinade that I love and fry it or baking it PEOPLE JUST LOVE IT. In Israel they sell many goodies that are made from soy, Tufo, Seitan, Lentils and so on. Cheers.

I was on the road today..so I was just kind of snacking around. I did go to Popeyes because I wanted a holiday cup but of course they had stopped selling them..a couple of good things happened today, but overall it wasn't my day!

Did you have a mystery shop? I didn't know they did holiday cups. I'm sure they had one left somewhere they could of sold you.

Supper tonight: wheaty spaghetti noodles with marinara sauce, a little cheese sprinkled over. Broccoli and cauliflower and mushrooms with a little flaked almonds. Faux fish (2) and dessert: leftover pumpkin custard with some carob chips. I think I ate too much.

@thislittlepennyearns I ran into this fake fish at a discount store and its so good that I am worried that it is full of bad stuff!!!! Its like breaded fish filets but has stuff in it like wheat gluten and soy and seasonings. The Gardein company. I found the product on line after I bought it so you can go to their website to see what I bought. I try to stick with basics like canned beans and lentils but sometimes I want a bit more and then I eat these faux fish fillets. The texture is pretty bang on, too.

Baked chicken on top of leftover dressing, from Christmas dinner. For a vegetable, creamed spinach. It was fast, easy, and quite delicious.

We had cold roast pork and salad last night but I'm not sure what on the menu for tonight. My husband does most of the cooking.
