What's for dinner? January 4

What's going on the dinner table tonight? Do tell! I am trying a recipe that I saw on Mexican chef's Pati Jinich's Twitter last week: Tres Quesos Chicken Pasta. I've never been a big fan of one-pot meals or cheesy chicken pasta dishes, but for some reason this one just looks good to me so I want to check it out. To go with this I will make some steamed garlic green beans. That's what's happening here. What are YOU having? I want to know!

It's actually my dad's turn to cook at my sisters but last week, I made Chili. Next week, I think I'm going to make Chicken Lasagna or Minestrone Stew. :)

I've never heard of chicken lasagna. Is it just a meat lasagna made with ground chicken?

@NJChicaa It's really good. You boil chicken in chicken broth with onions. Cook lasagna noodles. layer like you would a normal lasagna but each layer put chicken, cheese, mushrooms, butter, some of the broth and milk then you bake it for so long. It's so good!!

@NJChicaa when my mom makes it it was that with tomato juice. My boyfriend did with spaghetti sauce and macaroni noodles it was good

@NJChicaa Everyone makes theirs different. With mine, we have ground beef, noodles, diced tomatoes and the secret ingredient. Butter. :)

That dish sounds good. The next time I get some food I want to make Tuscan chicken in the crockpot. Tonight I just had some left over pizza. I put some veggies on top though.

In the oven. Is baked chicken. And my mom. Is cooking zucchini, onions, garlic and mushrooms and also som rice. Seems like a good dinner to me and I was doing the laundry and helping with stuff around the house. Glad she is home to cook too as moms ccooking is always so good. Enjoy your dinner

What I am having right now is a sleepless night at 2 AM. Perhaps I will be able to sleep soon. That pasta dish sounds good. For dinner last night I had chicken livers.

@NJChicaa you would be amazed at how delicious chicken livers are. Here is a great recipe but of course if you really don't like it then you don't
Spicy peri-peri chicken livers is the ultimate quick and easy meal or snack. Chicken livers are cheap and super nutritious. And they taste damn good.

Hope your chicken dish is as good as it sounds. Tonight I'm making meatloaf, mashed potatoes, carrots (comfort food for this horrible weather)

That sounds like a wonderful comfort meal. I actually was thinking of making meatloaf tomorrow. I have a ton of ground turkey in my freezer and plenty of potatoes on hand. I doubt we will be getting out of the house even tomorrow.
