Baked Chicken Thighs and Yellow Rice Risotto

That's what's on the menu for tonight. It's my first time making Risotto, so wish me luck! I have been trying a lot of new things recently. I made my first apple pie a few weeks ago, it turned out perfect! My boyfriend was really proud of how it came out and says that I am a good cook. I love to cook, so I am always ready to make something new!

Yellow (saffron) risotto is the food symbol of my native town in Italy. I make a very good one.

Seems like you are going Italian, no we have never tried making risotto, you mentioned yellow rice, what makes it yellow?

@MikesAngel317 I see it's the saffron. Here if we want to give our fried rice a yellow color we at times put turmeric or curry.

Not sure what makes it yellow, good question. I just used a pack of yellow rice with saffron.

Risotto isn’t hard. You just have to be patient with it and stir, stir, stir. I make myself a drink and just relax as I stand by the stove when I am making it.

You're right, it isn't hard. Mine came out, what I would consider, successful! You just have to make sure you don't under or over cook it.

Risotto is amazing! The first time I tried it I fell in love. I'd love to learn how to make it. Be sure to share any tips from your experience. :)

It's easy! It all in the preparation of the rice. It's just cooking rice in some sort of broth, low and slow, stirring... As the rice cooks, it releases it's starch, which is what makes it creamy. Adding milk or butter gives it an additional creaminess.

@MikesAngel317 That sounds pretty easy. I'll definitely have to give it a try. A bit nervous though since I literally learned how to make rice last year. :P
