Happy Thursday all and hope it is going well. Last night I attempted to follow a recipe a coworker gave me of roasted brussel sprouts and sweet potatoes. His recipe called for a mix of balsamic vinegar, olive oil, apple cider vinegar and honey, roasted in the oven "until its done" (lol). I modified the recipe like I usually end up doing by using a light balsamic vinagrette salad dressing, tiny amount of olive oil and apple cider vinegar. The brussel sprouts turned out perfect and delicious. I had not boiled the sweet potatoes prior so they did not gt soft until about 30-40 mins baking at 400. I loved the sprouts but i dont think ill make it often since they stink. Going to roast a couple more sweet potatoes today before work though. Have you ever tried this or have a similar recipe to share? Please do!

No, I haven't tried that, but it sounds good. When we were in Niagara Falls a couple of weeks ago we had roasted Brussel sprouts that were done in garlic and parmasean, and they were delicious.

@maezee Oh I know. We've always enjoyed Brussel sprouts, when our son was really young, like in a high chair and we were introducing solids to him, his favorite was to have a cereal-sized bowl of Brussel sprouts for supper. And then he'd toot toot toot all night long

I love roasted vegetables and make them often. When we went out for New Year's Eve with a group of friends, I ordered a side dish of Brussel sprouts roasted in garlic. They were delicious, but mine are much better!

I've tried roasted brussel sprouts before but I prefer to lightly saute them with some onion, garlic, salt and pepper. I prefer the smaller ones to the bigger ones as well.

@maezee I have had brussel sprouts before and did not like them. Never had them roasted so I can't really say if I like them or not. And sweet potatoes, blahh I have tried them so many times in different ways, yams, french fries, whatever else and I cannot stand them haha

I love those little baby cabbages! I actually don't mind the smell. I prefer to sautee my brussel sprouts in a pan with bacon and get a nice char on them. I've never tried roasting them but it seems like a great idea. I'll have to try it.

Bacon sounds like a popular idea.

I usually will first steam the brussel sprouts then cover them in avacado oil, salt and pepper and broil them with a steak or something meaty until they are nice and brown. The only way I will eat brussel sprouts.
