Sweet Pickles

Too much spicy isn't good so we can have sweet pickles as well. Over here we used to make pickles which are sweet in taste and these Pickles include Cauliflower, carrots, turnip and it tastes sweet because jaggery is added in that in liquid shape.
We usually make these in winters and it tastes so good and we can put them in Fridge as well.

In Philippines we make Pickled Green papaya (or pawpaw not sure). When a papaya is unripe, it has a whitish-greenish color, it is slightly flavourless, but very crunchy. We use a special scraper that will yield long, thin, papaya shreds and then we add thin slices of carrots (shredded, flowered, however you like it), maybe a few raisins/sultanas, pickled cucumber and then we place them in a jar that has vinegar, sugar, salt and some people want it with pepper. This will preserve the fruit/vegetables for a long time and is best served chilled/cool as a side salad or garnishings for grilled or barbecued meat. It provides that very happy balance.

I like sweet pickles. It is dill pickles I dislike and cannot eat.
