instant pancake mix with canned corn kernels baked in a rice cooker

so i tried another experiment. was delighted to see a small can of corn kernels at the supermarket, so it gave me an idea. bought a small box of instant pancake mix, the one that's marked "just add water". then, instead of water, i used a small can of evaporated milk. when i mixed the instant pancake mix, evaporated milk and canned corn kernels in a bowl, i noticed it was too thick, so i added a bit of the corn kernel juice. i greased the rice cooker pot with margarine before pouring the mixture in. i also put aluminum foil before covering the rice cooker and pressing 'cook'. when it switched to 'keep warm', i checked inside. it has risen, but the top is uncooked. i waited for a few minutes then clicked 'cook' again. when it switched to 'keep warm' again, i pierced the cake with a fork and it came out clean. to be sure, i clicked 'cook' again. result? the bottom was a little burnt. hahaha! but, hey, the rest was "dry!" maybe i'll try pressing 'cook' just once next time just let it bake on its own. maybe i'll also put some of the corn on top next time.

Prepare the mix like pancakes and you will have them dry and not burnt.

i actually did this before but put waxed paper at the bottom. this time, i tried just greasing it with margarine, hoping it will result in a smoother bottom with no wrinkles from the paper, but i guess i'll have to go back to lining with paper..

Interesting experiment! So how did it taste? I know people cook with their rice cooker, but I've never done that - only rice!

@hereandthere I've seen mixes like that too! Actually, sometimes I will use chicken or beef broth instead of water to cook the rice.

I don't even own a rice cooker, but make perfect rice every time in any pot. I don't understand what you were trying to make. Cake? Cornbread?

we used to cook rice in a pot (kaldero) on the stove every day, yet i could never master it, so i'm eternally grateful to the inventor of the rice cooker! hahaha! i guess it's not really cornbread, nor corn muffin, so corn pancake? hahaha!

@Teekaaa i've always like the toasted and slightly burnt parts of bread, the top, sides and bottom. i like the crunch and the slightly bitter taste. but of course i don't eat any charred, blackened parts!

this is probably the 3rd time i "baked" something in the rice cooker. my peg was the kenny rogers muffin, but shaped like a round thick pancake. he-he.

it's not outstanding since i'm not really a baker, but not bad, either! i might try creamed corn next time, but it would be nice if they also come in a smaller can.

Yrs, I think you should just press it one time and let it stay there for a while even on keep warn sign is up. Because it will still continue to cook

I think the alufoil made it not cooked for the first time. Maybe if there was no alufoil on top of the mixture, the pancake would be cooked like rice.

yummy. premix pancake flour is expensive in my country, 3 X compared to normal flour.
