assemble your own burrito/nachos dinner

It seems like I'm either talking about my misadventures or I'm talking about food. Occasionally they're the same thing... but not tonight!
We eat this sort of thing a lot, mostly because it's easy and because even the picky eaters are happy. I put tortillas, tortilla chips, bowls of toppings and seasoned meat on the table, and everyone puts their own food together. What I set out varies, depending on what I have on hand. Tonight I've got refried beans, salsa, lettuce, sliced olives, shredded cheese, sour cream, and Christina made some Spanish rice.
Now if only everyone would get home from work so we can eat. I'm hungry!

@spiderdust I would love to do "nachos" but haven't found the right cheese dip recipe that my kids like. I want to do it with a natural cheese - but everyone likes that Velveeta stuff!

@much2say We just put regular shredded cheese on it. I've made a cheese sauce before, adding cheese to a white sauce recipe, but it's not like the Velveeta stuff or Cheez Whiz. Occasionally we'll have a jar of Tostitos queso dip in the house, but not very often.

I love food posts, lol. Even if i don't eat that kind of food, the posts are normally interesting.

I know one kid will probably try to just eat chips and cheese... I have to almost make him eat vegetables.

I do wish I had limes and some queso sauce on hand, but what we have will do. The Spanish rice may be spicier than what the kids like, unfortunately, but they'll eat all the rest.

i am a rice eater, so i think when i have a meal like burritos or nachos, i will still get hungry.

@ridingbet I had it as a side item since I made my meal into nachos, but a couple of people put the rice inside their burritos along with everything else.

I love burritos but I never assemble them at home.I just go to Taco Bell.
