What are your countries Christmas traditions? do you have any food that you MUST have for Christmas?

I still like to have a roast with all the trimmings, love pavlova, and friut cake and pies!

We always have a roast too. One year we tried seafood and salads and it didnt feel like Christmas at all. We always have friends over for Christmas eve to watch Carols by Candlelight. Husband this year thought it would be a good idea to go, but I think after sitting on the grass all night the night before this old lady wouldnt be able to move Christmas day, least of all cook a meal.

Well if it was this old lady going, I would be taking a fold up chair, nothing like being different and also noticed at the same time!

I dont think they let you take a fold up chair at the Melbourne one. There are seats but they are sold out on the day the tickets are released. I also hate crowds, so I will be watching it at home.

every year christmas eve we make tamales, and we stay up til midnight at which point we open gifts :]

I dont think I know what tamales are! I see you are in Sacramento but what country do tamales originate? If I stayed up until midnight and started opening gifts Chistmas day would be a failure :)
