It's been a busy morning. I got a letter from my best friend, and sent a reply back. Got my hair done, just cut this time, then went shopping. All that after an hour in the pool and getting up at 2 AM doing the Daily Bible Study and getting all my notifications finished before going to the pool. I've never had that happen before. So, I'm starting fresh with new notifications.
I've been on rations for the past week, so it was good to see my SS in my account this morning. All but one of the bills are paid, still waiting on the cable bill. I expect this will be the last cable bill I'm going to pay. I'm going to get everything off the DVR and cancel cable and my landline and use only my cell phone. Thankfully I don't get that many calls as I have limited minutes.
So, now my freezer is full, and I have vegetables, sort of, in the fridge. I'm estimating I have approximately 21 meals, though the fish could make it more, and the roasts I cut in half could also be a couple days of meals as well, so I should make it to day 28 without a problem. I will still need to pick up a few things before the month is out, eggs, potatoes, and almond and cashew milk, also the cooking spray I did forget this morning. So I should be good.
One thing I want to do is make a tuna casserole. Can someone please tell me how to make a white sauce. Is it flour, milk, and butter, which would translate to almond flour, cashew or almond milk and clarified butter? Or is there more to it than that? Thanks. I really want a tuna casserole. I haven't had tuna in almost 8 months, so it will be a different meal for me.

I hope so too. Yes, I tried the daily thing, but was spending way too much money last month, so I'm going to do what I can and hope for the best. I was keeping track of the possible number of meals. I don't know how many perch are in each package of fish, and I still have fish in the freezer from before, so I should be okay. What I'm still having a hard time with is vegetables. I just don't eat much of them. I do have potatoes, onions, sweet potatoes, and spaghetti squash. Considering how often I have those, will determine how often I buy more veggies.

I would be interested to see a cassarole that will work on your diet.
I don't have cable or home phone. Verizon prepaid which is what I have is $40 for unlimited texts and Calls. In case you were thinking about switching phone plans or providers

My phone is the government phone which is free. So for now, I'll be sticking with that. Thanks for the info though. I hope it will work as well. I'm going to use spaghetti squash for the pasta, I just need to figure out the white sauce for it.

White sauce is tricky to avoid lumps, but very easy. You need butter, flour and milk (in this order), clarified butter is perfect, I have never tried using almond milk, if it does not curdle boiling is fine. Do not forget a pinch of salt.

I don't know if it is expensive, I never paid attention to the price. It's delicious and a great substitution for regular milk. I'll never go back to regular milk again.
My friend gave me the recipe, which is what I thought it was.

Good to know. I didn't think about Googling Whole30 for the tuna casserole. I should have done that first. I usually do look there for what I can do with food.

I have never made a white sauce for tuna noodle casserole. I use one can of cream of celery soup and one can of milk. Mix it together. Your way may be cheaper, though.

Sounds like you've stocked up on good foods in your fridge, freezer, and maybe pantry. My cousin recently canceled her cable service last month, since she doesn't have time to watch it anymore. She also tossed out her TV. Tuna casserole sounds good.

I'm not going to toss out my TV, that's a bit drastic. I'm looking forward to the huge savings when I cancel it.
Yes, I'm well stocked, though for my pantry, it's the canned tuna. Usually everything I buy goes in the fridge.

Yes. They keep raising the cost. So, I'm looking for another cheaper way to watch the programs I love, though both of them are on network TV. I'm on a very limited income, so I can't have something to keep going up all the time. It's one thing I have no control over the utilities. Cable is something I don't need, so I'm looking for something else, and thinking about Hulu. We'll see. Nothing is decided yet, except that I'm getting rid of cable as soon as I clear my DVR.
