@Sunshine61 In England Shrove Tuesday (the Tuesday before Lent) is known as Pancake Day. One is supposed to use up the ingredients one can't eat during Lent but, as eggs and flour seem to be allowed, that never made sense to me.
My mother used to make very good pancakes and always served them just with a sprinkling of caster sugar and a squeeze of lemon juice. I was just never very fond of them this way and always asked for cheese pancakes (with grated cheese in the batter).
In the winter, when it had snowed heavily, she used to make snow pancakes. These used a little less milk than usual but had a good cup or two of snow beaten in at the last minute before cooking. As snow is mostly air, this made them very light and fluffy. I was happy to eat them with lemon and sugar then!

I have had pancakes with powdered sugar on top or honey. Both very good. I am thinking of trying them with cranberries next time. And if you really want to sweeten things up you could try cinnamon sugar, whipped cream or ice cream.
