Today I made some chocolate brownies which were made with black beans. I was a bit worried they wouldn't work but they are one of the nicest brownies I've ever baked! Have you ever created or found any unusual recipes that sound as if they wouldn't work but then end up being delicious?

@redurnet i wonder how the black beans with cocoa would taste like. of course a dish with chocolate is nice, but with black beans, i cannot imagine that.

No, you can taste a little bit of bean flavour but the recipe uses honey to sweeten it and the cocoa has that warm rich flavour too.

Those sound like a vegan recipe, which my daughter-in-law would love! I barely cook these days.

@redurnet I had delicious vegan apple muffins a few weeks ago and cookies two days ago. They were wonderful. It's best to experience many recipes.

I love to cook vegan things, mostly because I don't like the idea of using eggs. I went to a vegan festival a few years ago now and I bought my first ever vegan cupcake and it was the most disgusting thing ever. I was convinced I could find a nicer vegan cake recipe and have been baking vegan cakes ever since. Some of them work, some don't work as well but it's fun trying.

Thanks, I have made them again. You have to be careful about blitzing up the beans so they are smooth in the recipe.

I tried making burgers once from black beans. I surely did not like those at all. But glad to hear your brownies came out lovely for you.

Thanks, I haven't had much success with bean burgers either - they always fall apart.

South East Asians use Avocado for desserts. Usually they mixed mashed avocado with condensed milk and sugar and freeze it on the fridge making it like an ice cream.

@redurnet Most Americans use it as a vegan savory mayonnaise like spread.

Oh, that sounds very interesting. I have to admit I have never even tasted an avocado before. I think it would be quite nice blended up in this way.

Oh yes, this works doesn't it! I made a cake a few years ago with zucchini in it and you couldn't even tell it was in there but it made me feel like I was eating something healthy.

@redurnet I think carrots have even been hidden in brownies before. The first time I had zucchini brownies was when my aunt brought them for a family gathering years ago.

I've been 'experimenting' with cooking foods both familiar and unfamiliar for years--always fun even when they turn out 'bad'! LOL

I heard about using black beans from one other person here. I'm glad it turned out good. I'm on a no sugar diet, so I'm getting creative with my desserts.

I haven't myself but a friend has made a great fruit-cake that has beetroot in it. And of course, one time a carrot cake was very daring.

@redurnet You couldn't taste a beetroot flavour but it was dark and lovely and moist.

I've never heard of beetroot being used. They have a very earthy flavour and I'm not sure I would attempt it!

Yes, they were a flour substitute and it made the brownies very fudge-like.
