Regrowing veggies

I mentoned in this post by @GardenGerty , I'm trying to regrow some carrots.
As you can see here, they are sprouting quite well. Those are new greens. I did not remove the dried brown bits off because I think they can use that as food. Basically mini compost. Once those sprouts have grown enough, they'll be planted in the soil.
One of the carrots is already growing fresh roots. The other just has one lil baby root so far.
I also have an onion going. It has grown new roots, but no sprout yet. I'm waiting for the sprouts to plant it in the ground.
I've got a romain lettuce going as well, but so far havent noticed anything too impressive other than the center has become more green and there does seem to be some new leaves beginning to form. They are too little to pick up though. The cool thing about the lettuce is it does not need to be put in soil.
If you want to regrow your veggies there are plenty of how to videos and tutorials available. Just make sure to change the water out every other day at least and check the water level. Some need more water than others. Some need more sunlight.

Somewhere I have a book I bought about this. I have also read that some people eat the carrot greens in salads. I need to get with it and do some of this. I have done celery in the past.

Never tried the carrot greens. Supposedly they have a bitter taste, but that can be solved by boiling them for about 20 mins

I did that with a romaine lettuce and did get some leaves and ate them.
