What's for dinner? August 14

What's going on the dinner table? I want to know!
I am making ham. It is a smaller one that is already carved. I've had it in the freezer for awhile now. There is a special mustard sauce that I am making from the Small Victories cookbook that goes with it. I am also making Pressure Cooker Corn Risotto from Serious Eats, sauteed baby spinach, and homemade biscuits from the cookbook that I got from the library today--The Food Lab.
It sounds like a lot but the biscuits are already in the oven and the risotto takes 4 minutes in the Instant Pot once you saute the corn and the rice. The mustard sauce takes just minutes to make too. I am bored and need to keep myself busy so cooking is a good way to do that.

We had frozen pizza, because I needed simple and fast. I did make a pork ragu in the Instant Pot last night and thought of you.

@spiderdust I really like Dinner in an Instant by Melissa Clark. Many people complained on Amazon that it was too "fancy" though.

@NJChicaa I got the Instant Pot Italian cookbook from the library and liked two different sauce recipes... so I combined the two and made a not-terribly authentic ragu. I think I'll use the leftovers to make chili for dinner tonight.

I cooked pork tenderloin, fresh cabbage, and loaded mashed potatoes. Your ham sounds good. We did drink ice water instead of sweet tea.

@NJChicaa Some years at Christmas, I make a glaze of mustard, brown sugar, and orange juice for the ham.

I finally received my toaster oven. It is an Oster and big enough for a whole chicken and casseroles. So since I am still ordering bits and pieces online from Amazon to complete my needs I ordered on comfort food cookbook and one for casseroles. That is enough for me for now. This way I can have leftovers to freeze and always have food on hand. Your dinner sounds great.
