What did you have for lunch today?

Who says leftover burritos are boring? I took what was left of my pollo burrito from yesterday, added onion and Swiss cheese, grilled it at 375 for 20 mins, topped it with hot sauce and hot peppers, and had a delicious lunch.
Do you add good stuff to leftovers to make them taste better? What did you have for lunch today?

I no longer eat either breakfast or lunch but eat one big meal a day at supper time. It's a test I have been doing for about a year now. I seem to prefer this way of eating. It's called Intermittent Fasting.
So, if you ever took me out for lunch, it wouldn't cost you anything.

@TheHorse I maybe lost a couple of pounds. Everything else is pretty good and that's why I have continued.

@NJChicaa Yes, it's mostly a low country/South Carolina thing.

It looks yummy!! Yes adding good stuff to leftovers definitely make them taste better. I had steamed rice, pulses , soya chunk curry and vegetable salad for my lunch. It is bed time here and I just had yummy mushroom and capsicum with chapati( Indian bread) for dinner.

@arunima25 Got it. Naan is served at most Indian restaurants here in the US.

@TheHorse It is made of wheat flour and is healthier. Naan has all purpose flour. Naan is for occassional eating as it is not healthy. Most Indian households have chapati and rice as their regular carb.

@arthurchappell Glad to hear. It was a "forced" meal, but it was still good.

@LeaPea2417 That's what I do when I "rework" a pasta dish. I might add some onion and garlic too.

@compslick Heh. I think the Milwaukee Brewers have sausage races during the 7th inning stretch.

That looks yummy and filling. I somehow gained the badge of master chef at restoring leftovers. My kids and hubby don't even know that it's what they had yesterday. :-D

I do usually add something extra if there's something else that needs to be used up. Today I had a steak and cheese sandwich on potato bread with southwestern ranch.

@TheHorse I usually do. But I wasn't driving into town just for blue cheese dressing.
