Like many people I constantly see recipes online. I sometimes download them. Then they usually just sit there.
Seldom do I really try them. This time was different.
I had downloaded a recipe for keto bread from a blogger. It called for almond flour and coconut flour both. Almond flour is very pricey and I hesitated to buy some. The recipe only called for one tablespoon full of each flour.
The recipe suggested 1/4 grated cheese for flavor and a tablespoon of herbs of your choice. I did the grated parmesan like you shake on pizza and 1 T. freeze dried chives.
At Wal Mart I found an alternative flour made of coconut flour and other nut flour, including almonds. The price was not bad.
This recipe "bakes" in a mug in the microwave. I made it for lunch today. You cook it in the mug, slide it out, then cut it in four slices. It was very good. I will make it often. I love bread, and this works as well as an English muffin. It is flavorful, but it is best if you pan grill the slices once you cut them.
I am excited. It is only 2 grams of carb per slice. So I could use this for a breakfast sandwich and have 4 carbs. A slice of bread has from 19-22 grams of carbs, and an English muffin has 24 grams. Woo hoo, I am excited about this.

Keto, or ketogenesis is one of the new, popular weight and fat loss diets.It is high fat and very low carb. It forces your body to burn fat, rather than the glycogen in your muscles.
Disclaimer: I am not following it. It does offer some things I need, though, like this bread. I am diabetic, and I LOVE bread, but I need to limit my carbs.

I added more web information in my post. It is yummy and easy. I really like the "flour" blend I bought. Nature's Earthly Choice Great Day Nut Flour Blend. Got it at Wal Mart. Anything similar should work.

My Co worker is on the keto diet and has lost alot of weight from it. She can only have like 4 grams of carbs a day I believe and eats no bread. I don't think I could do that kind of diet.

I do the same thing, I will see a recipe and it sounds so good. I have even printed some out and never end up making them. Most of them end up in the box that I keep recipes in. I do make one type of bread though, I got the recipe from my sister-in-law years ago. It's a type of sourdough bread. I don't make it very often, but when I do, it doesn't last long at all.

I would eventually like to have my own sour dough starter. I have a bread that I make with cottage cheese that is really good. I stir it up in the bread machine and then bake it. You add herbs and it is wonderful.

@GardenGerty I like cottage cheese,so that might be good to me to. The sour dough starter is well worth if you can get it going good. I make the starter that you use potato flakes as one of the items when you feed it,.

I added the information to the whole discussion. I also wrote more about the flour blend I used. It has a tablespoon of milk, but I imagine you could use almond milk.

Cloud bread is one of those recipes I saved but have never tried. I would like to. I have made the pancakes from eggs and bananas. They are more like crepes. Okay for an occasional thing.

I am not sure of the price, I cannot remember. Pretty sure it is under $10 for the bag. It looks like really finely ground nuts, which is what it is. I wonder if I could do the same in a coffee mill or whatever. It is bad, as the recipe only called for 2 Tablespoons total, but I knew I could add it to other things and not waste it if the recipe flopped.

I explained a little more. I do not follow the diet, but some aspects of it are good for me. The bread I liked has no grain and it will not drive my blood sugar up.Keto is high fat, low carb dieting.

Well, I also have sime downloaded recipes that I did not try yet. But I do have sine that are quite tasty when I have tried them. Sometimes my wife is surprised as to how I came to cook with such menus. Good to hear about your bread.
