This recipe I'm looking forward to preparing calls for sun-dried tomatoes.
Living in Dubai, UAE, we have excellent exposure to the sun which I want to make use of. However, it is usually dusty to be leaving food out in the open.
Any suggestions on how I might naturally sun dry such food like garlic n ginger (for making powder of the same )

You have to peel and slice the garlic (same for the ginger). Place the slices on a sheet, cover with a net and leave them in a sunny area until they are fully dried.

There is a process called vacuum drying. You can dry fruits, vegetables and others without spoiling the color and taste.
This one is okra or lady finger.

Use a rattan basket to dry it in the sun repeatingly.

You can put cover them through net and put a thin cloth above..

Cover the garlic with a mesh net n cover the mesh net with a cloth.
