Lunch with Carolina was perfect.

Leticia made the most delicious empanadas for lunch. They were fried and two kinds: cheese and seafood. I ate so much at lunch that I´m just heating the last empanada for a late dinner. After lunch, and a long conversation, we went to my room for a mixture of TV and nap. I saw a whole chapter of the life of Sor Juana Inés de la Cruz, a great Mexican scholar, while Carolina (who had picked it) fell asleep halfway. We had a cup of tea after she woke up and she went away. It was a lovely day! I am now going to start mylotting when the day is almost done.

Empanadas

- I love them, but I don't think I've ever had a seafood one . . . I know I'd love it. I hope to make them sometime . . . can they be baked?

I am sure of that. But the dough is different. Dough for baking has to be thicker.

We have the similar food here but usually it is popular during Chinese New Year. But ours are sweet and there are shredded coconut, sugar and chopped peanuts inside. They are smaller.
